Baked Lobsters with Garlic Butter

for 2 servings

  • Boston Lobsters, 2 pieces (500-600g each)
  • 3 tablespoons butter, melted
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon minced garlic
  • 1 teaspoon Old bay seasoning
  • 1 teaspoon fresh parsley, chopped
  • 1 teaspoon lemon juice
  • 2 wedges lemon, to serve
  • broccoli, cooked, to serve (optional)

Instructions

1. Boil lobsters for 4 minutes in salted water.
2. Preheat oven to 200°C.
3. Using a knife to cut along the middle of the top of the lobster shell towards the fins of the tail, making sure to cut in a straight line.
4. While cutting through the shell, you may have also cut into the meat, which is perfectly okay. Remove unwanted parts like the lobster legs so that it will be easier to scoop and eat.
5. In a small bowl, combine butter, salt, pepper, garlic, old bay seasoning, lemon juice, and parsley, then spread the mixture evenly over the lobster meat.
6. Place the lobsters onto a baking sheet, then bake for approximately 4-5 minutes, until the lobster is fully cooked but not rubbery.
7. Serve with a side of broccoli and a lemon wedge.
8. Enjoy!
